Avocado cookies. And yes, they ARE amazing

I accomplished something like a life goal today! For years now, my boyfriend has been laughing at my inability to make homemade avocado brownies. I have no idea why, but every time I have ever tried to make them (and I have tried several different recipes), they completely flopped. I figured that I should give up on my avocado brownie dreams for good…
But then, everything changed! Enter the avocado COOKIE! Why I had never thought of this concept until today I will never know, but let me tell you… it is BRILLIANT! The texture of these cookies turned out absolutely fantastic - it’s like that chewy, soft texture that my grandma’s cookies have. The avocado taste is not overpowering at all and actually goes really well with the dark chocolate that I grated in there. The best part is, this is a small recipe, so it only made 8 relatively large cookies… but that gives me total motivation to bake more! I have been having dreams of including an oatmeal layer since I first tasted these an hour or so ago.
So what was it that I started saying about life goals? Oh yes, my boyfriend challenged me a while back to try and actually create an edible dessert with avocado baked into it. Well, mission accomplished!
Overall, 10 out of 10! This recipe is a winner. Healthy, yummy and just plain good. Enjoy!
Dark Chocolate Avocado Cookies:
· 1 ripe avocado, finely mashed
· ¼ cup white sugar
· ¼ cup brown sugar
· 1 egg
· 1 tsp. vanilla extract
· ½ cup unsweetened cocoa powder
· ⅓ cup flour
· ½ tsp. baking soda
· 2-oz. dark chocolate, coarsely chopped into chunks
1. Preheat your oven to 350 degrees
2. In a medium-sized bowl, combine the finely mashed avocado, white sugar, brown sugar, egg and vanilla extract
3. In a separate bowl, whisk together the cocoa powder, flour and baking soda. Add the dry ingredients to the wet ingredients and mix until just combined
5. Gently stir in the dark chocolate chunks
6. Using a small ice cream scoop, add one heaping scoop of dough on to a baking sheet lined with parchment paper. Repeat until all of the dough is scooped up
7. Bake for 8 to 10 minutes or until the top has set. Don't over-bake!
