Next-level probiotic-infused salad dressings

I decided to try something new to jazz up my salad for lunch today, and I am REALLY excited about it! I was thinking about how kombucha can basically turn into vinegar if you leave it brewing long enough, and then it clicked – vinegar is one of the two main ingredients in salad dressings! Most salad dressings are an oil plus a vinegar. You can use any oil and any vinegar that you want, so my thought process was what if I were to use kombucha that had been brewed a little longer and turned slightly vinegar-y and see how that turns out?
I think that this is brilliant, and given that you can make kombucha any flavour you want, I am thinking that there are probably endless options for ways that you can make the end result taste.
The added bonus I figure is that this would be a fabulous way to get all of those probiotics in that we all need... I already eat a ton of things like fermented foods, but I figure that I can always use more!
To get started today though, the experiment is pretty basic… I am using unflavoured kombucha sweet tea (inspired by the fact that my latest batch that I switched over into F2 yesterday had about 1/3 cup of liquid left that wouldn’t fit into any of the jars, but I didn’t want to waste it). Combine that with my favourite – raw buckwheat honey! I also just picked up a brand new bottle of a really great extra-virgin olive oil a few days ago, and I am super excited to crack it open to try out this recipe.
It’s nice and basic, but I really think that the flavours are going to rock. Reviews will be posted by the end of the day!
Kombucha & Honey Vinaigrette:
· ¼ cup kombucha tea
· 2 tbsp. raw honey
· 2 tbsp. water
· 1 tsp. sea salt
· ½ tsp. black pepper
· ¾ cup extra-virgin olive oil
1) Combine the kombucha, raw honey, water, sea salt and black pepper in a blender or food processor
2) Very slowly drizzle the olive oil into the dressing while the blender or food processor is running until your desired consistency is reached
3) Serve immediately. You can store this in the fridge for up to 5 days
