"Lion's Mane for the brain"

Lion’s Mane… one of my favourite medicinal mushrooms! It has been for a long time too, ever since I first discovered its amazing memory-boosting and cognitive processing enhancements abilities. Remember: “Lion’s Mane for the brain!”


But it really does work, and it is so easy to incorporate into your daily menu… it tastes like any other mushroom really. Nice umami flavour, firm texture under all those strands, and it really likes being paired with things like sauces or other veggies (think stir-fry). If you already like mushrooms, you'll love these.


These just might be my favourite way to make lion’s mane mushroom too. Granted, I will love ANYTHING that can be turned into a crab roll, but these just have such a great texture and a wonderful flavour. Try them with a large Greek salad and crusty sourdough rolls for best results.

 

Lion’s Mane “Crab” Roll:

·         ⅓ cup mayonnaise

·         1 teaspoon lemon zest, grated

·         1 tablespoon lemon juice

·         6 drops hot sauce (optional)

·         1 teaspoon old bay (if you don’t have this, just use salt and black pepper to taste)

·         2 tablespoon shallot, finely chopped

·         1 teaspoon chives, fresh or freeze dried

·         ¼ cup celery, finely chopped

·         16-oz. Lion’s Mane mushroom (pre-sauteed with butter and garlic)

·         Italian parsley, finely chopped for garnish (you can also use chopped fresh chives, or fresh dill as the garnish)

·         Old Bay sprinkle as garnish (optional)


1)    Add the mayonnaise, lemon zest, lemon juice, hot sauce, and old bay to a medium bowl. Whisk to combine the ingredients for the dressing

2)    Add the chopped shallot, and celery to the dressing and stir until fully combined

3)    Add the mayonnaise mixture to the Lion’s Mane in a large bowl. and very gently fold the mushroom into the dressing

4)    Serve the salad on top of freshly baked sourdough long rolls, garnished with a sprinkle of old bay and chopped parsley
