Looking for a simple, yet super yummy side dish to make this weekend with dinner? Look no further! I fell in love with homemade cornbread a few years ago, and by this point there really is just no going back. It HAS to be homemade cornbread for it to be worth it. And lately, it HAS to be this particular recipe, because it turns out amazing every time.
It's soft. It's fluffy, but still has a great chew. It goes great with inclusions like chopped jalapenos and grated cheddar cheese. And guaranteed that once you get this on the table, you will have maybe two or three minutes before the plate is empty and your family is begging for more.
So enjoy! Maybe have a Mexican fiesta-themed night this week? Any excuse to make cornbread!
Cornbread:
· 1 cup all-purpose flour
· 1 cup yellow cornmeal
· ⅔ cup white sugar
· 3 ½ teaspoons baking powder
· 1 teaspoon salt
· 1 cup milk
· 50 grams sourdough starter
· ¼ cup melted butter
· 1 large egg
1) Mix the dry ingredients in a bowl. Set aside
2) Mix the wet ingredients in a different bowl
3) Add wet mix to dry and stir to combine
4) Bake at 400 F for 25 minutes
