Food for thought

I read something interesting today. There was a study done in 2017 from Rush University that involved 1000 adults and it came to some incredible conclusions – it turns out that when people eat just ONE SERVING of leafy greens per day, they appear 11 years younger in terms of their cognitive health (when compared against those who rarely or never consume leafy green vegetables!
This tells us that people who consume greens can think more clearly, have less brain fog, remember things like names and details better, and tend to be more productive overall throughout their days. In other words, their brains seem to ACT YOUNGER.
So later this year, I will be turning 38 years old. I am starting to notice that my brain and body are aging, even though the process has barely begun… so things like having less “get up and go” in the mornings, needing to go to bed earlier, and needing stronger glasses are all happening. Reading that statistic that is saying that we can basically take ELEVEN YEARS off of our brain’s age is mind-blowing! Think about it… what would it mean for you (or for your family and loved ones) if suddenly you would restore 11 years of healthy brain function to them? To yourself?
I am going to let you in on a little secret. It is possible. It actually even sounds pretty easy. It’s as simple as food choice – eating the RIGHT foods (while avoiding the wrong ones) can help to prevent many of the major chronic conditions that plague us today. In many cases, it can even help to reverse them.
Now knowing that, my question for the world is this… if we all know this truth (and I am pretty sure that we do), why do our food choices and lifestyles not reflect a desire for healthier living?
Just some food for thought to wrap up the week… and now, to go spend my Easter weekend enjoying the clean and beautiful space that I live in, right on the waterfront, and dream of endless salads.
