Sourdough pizza? Yes please!

So it’s a beautiful sunshiny weekend, and as always, my ponder is starting to turn toward what to make for dinner. Luckily, today I think I have an idea exactly what I want to make already – sourdough pizza!
The wonderful thing about adding sourdough to your pizza crust is that it adds so much bang for your nutritional buck, while adding delicious tastes and that wonderful sourdough texture. You can add any toppings that you like, just like any pizza, but I think that for today (to keep my meat-loving boyfriend and my veggie-loving selves happy), I am going with pepperoni, spicy sausage, roasted peppers, roasted garlic and onions, mozzarella cheese, ricotta cheese and hot peppers. Sounds delicious, no?
Planning to serve that up with a HUGE leafy and colourful salad, full of phytonutrients and colour. Add my most recent batch of homemade strawberry-mint kombucha to the mix, and you have the potential for something that is just delicious.
Try making this yourself over the weekend… it’s super easy! It always turns out great too (one of those foolproof recipes I guess…). It gets even better when you can add anything you want to it because you’re making it yourself!
Sourdough Pizza Crust:
· 1½ cups fresh sourdough starter
· 4 to 5 tbsp. olive oil, coconut oil, etc.
· 1 tsp. salt
· 1¼ to 1¾ cups flour
· Toppings of choice (try peppers, roasted onions, feta cheese or artichoke hearts for something a little different)
1) Preheat the oven to 500°F
2) Mix together the fresh sourdough starter, one tablespoon of oil, the salt and 1¼ cups of flour. Add more flour, a little at a time, as needed to form a pizza dough consistency. The amount of flour needed will depend on the hydration level of your sourdough starter (the flour-to-water ratios used when feeding the starter)
3) Allow the dough to rest for 30 minutes as it will be easier to roll out. (It won't rise significantly, if at all.) Roll the dough out into a circle using a minimum amount of flour to prevent sticking
4) Bake the crust for approximately 7 minutes
5) Remove the crust from the oven and brush on the remaining oil to prevent the toppings from soaking into the crust and making it soggy
6) Add the desired toppings and bake the pizza until the crust browns and the cheese melts
7) Enjoy!
