The sourdough experiment

I am finally doing it… I am attempting to create a loaf of sourdough by the book in every sense! I am employing every trick I have ever learned, every tip I have ever been told… all in the hopes of the perfect loaf (amazing hard crust, perfect crumb, excellent sour taste…;). I want it all). And I figure that I have been at least TRYING to bake sourdough for long enough now that I hopefully have a chance to getting it right.


The first thing I am changing about my technique is that I am using a THREE DAY process instead of a TWO DAY one. I have a hunch that the longer fermentation time will hopefully help to develop the flavour a little more. The other major thing that I am changing is that I increased the hydration levels by about 20%! But I think (I hope) that will pay off in the end.


So this is day 1! Leaven has been created and is sitting fermenting on my kitchen counter top! This gets to rest here overnight, and then tomorrow the magic happens! Stay tuned…
