Getting excited for my cookbook! Want a teaser recipe?

Well, I did it. I promised the world on a networking podcast this morning that I would share a few of the recipes that are going to be in the cookbook that I am writing. And as exciting as that is, I am also a little terrified... what if people don't like them as much as I do??
Well, I searched through my index of recipes and found one that I just KNOW you all will love... and it might just become one of your favourites too. I love this one because it is full of healthy fats and tons of flavour. Plus, nutrients? So many! Healthy fats, vitamins, minerals, phytonutrients... it doesn't get much better than this.
I think that this dressing is just fabulous on top of some mixed greens and colourful veggies, like sweet peppers, red or green onions, pomegranate seeds and turmeric. Enjoy!

Avocado-Lime Oil-Free Dressing:
· 1 avocado, diced
· ¼ cup fresh lime juice (about 2 limes. You could also use lemons here)
· ¼ cup cilantro leaves
· ¾ tsp. ground cumin
· ¼ tsp. salt
· ½ cup water, plus more as needed
1) Process all the ingredients in a high-speed blender until smooth
2) Adjust the seasoning and add the water, a little bit at a time, plus more as needed to achieve the desired consistency (up to an additional ¼ cup)
3) Use within 1 day for best results
