My new favourite summer recipe

One of the best things about summer is the food. All of the fresh produce, bright colours, crunchy and crispy bites, and just the feel of it makes me happy at my core. I love creating recipes that fit into those descriptions, and today's that I want to share with you is no exception.


Magic happens when you pair shrimp with things like spicy flavours (found in this really simple spicy mayo) and and bright citrus (for this, I like using limes... but adding any other kind of citrus would also work nicely. Try things like mandarin orange or grapefruit!). The avocado adds the nicest creamy finishing touch and the end result is delicious. It's fresh. It tastes bright and healthy. It has the best "crunch" to every bite. And I think that this salad is just all-around wonderful.

Citrus Shrimp Noodle Bowl with Avocado & Spicy Mayo:

· 3 packages of rice noodles

· 2 tbsp. sesame oil

· Juice of 2 limes

· 2 lbs. shrimp, peeled and deveined

· 1 tbsp. extra-virgin olive oil

· 1 avocado, diced

· ½ orange, peeled and diced

· 2 tbsp. red onion, chopped

· 1 tbsp. sesame seeds

· Fresh cilantro, for garnish

For the spicy mayo:

· 1 tbsp. mayonnaise

· 1 ½ tbsp. Sriracha (or any hot sauce)


1) Toss 2 packages of brown rice noodles in a little bit of sesame oil and the juice of 2 limes. Set aside

2) Sauté some shrimp in a pan with olive oil (or you can use ghee) and add to the noodles. Add diced avocado, half an orange (peeled and diced), about 2 tbsp. red onion (chopped), sesame seeds and fresh cilantro and stir to combine everything

3) To make the spicy mayo: mix together 1 tbsp avocado oil mayo with 1 1/2 tbsp sriracha

4) Add all of the ingredients to a bowl, including the rice noodles. Drizzle with spicy mayo

5) Serve immediately with a large green salad and pickled veggies (like daikon radish and candy cane beets!)
